I have to admit when I first saw the recipe title Funeral Potatoes, I definitely had my doubts. Usually I just go to the restaurants near me when I want to try new foods. If you’re wondering where the title came from—the Pretty Providence website explains that the dish is traditionally served at funerals in Utah because it’s considered to be the “ultimate comfort food.”
